Nutrient-Packed Cashew Chicken Recipe

Ingredients:
- 1 ½ lb chicken breasts
- salt and pepper
- ¼ cup cornstarch
- 2 Tablespoons avocado oil
- ¼ cup soy sauce low sodium
- ½ cup chicken broth
- 3 Garlic cloves minced
- ¼ Tablespoons brown sugar
- 1 Tablespoon Hoisen sauce
- 1 teaspoon sesame oil
- 1 cup whole unsalted cashews
Instructions:
1. Cut your chicken breast into one-inch pieces and some salt and pepper.
2. Toss the chicken with the cornstarch in a ziplock bag.
3. Add avocado oil to a wok or large skillet over medium high heat. Once the oil gets to the smoking point then add the chicken in a single layer in batches.
4. Cook each side until golden brown.
5. In a small bowl whisk the soy sauce, chicken broth, garlic, brown sugar, hoisin and sesame oil. Set aside.
6. Add to the pan the cashews and the sauce. Toss until the sauce has thickened.
7. Serve over brown rice and with veggies to have a healthy, balanced plate!
